Best Place For Holiday For Under £500 For A Couple In May No Beach Holidays?

Hi wondering if anyone can help me with the following

WIfe and i (in our early 30s) wants to go on holiday she wants me to book and pay for it ofcourse , somewhere its hot , lots of shops , Want to go end of may . The catch is , is it possible to find a holday for under £500 for us for 7 ngts. Any website, place, suggestion welcome.
