how to make this easy sandwich I bought at the Ocean Beach food co-op in San Diego?

It was a super good sandwich with honey mustard, and a special bread, but I can’t remember anything else. Any ideas? Even if you don’t know, give me some recipes of a healthy sandwhich please!
I just realised I wrote easy sandwich whereas i wanted to say HEALTHY sandwich sorry!

Start with this special bread. forget what it’s called.
Slather with honey mustard.
Put other stuff on the bread.
Eat.

My favorite sandwich is a good hearty bread like and italian, french or sourdough.
Volpi salami. Provolone cheese. Both sliced thin. Layer with some roasted red peppers and a spicy gardinera. That’s a good sandwich.
OR
Peanut butter and Fluff on soft white or wheat.

    i think a great healthy sandwich would be:
    -oat nut bread (freihofer’s makes a good one)
    -honey mustard (you can buy it pre-made, or literally just mix honey & mustard)_
    -grilled chicken or smoked turkey
    -lots of veggies: i’d go with lettuce, onion, maybe sprouts and/or cucumber, whatever suits your fancy!

    you could add cheese or bacon, but if you’re going for healthy i’d stay away from those.
